Pan Seared Atlantic Salmon w/ Vodka Dill Cream Sauce - Roasted Red Bliss Potatoes - Sautéed Green Beans

Pan Seared Atlantic Salmon w/ Vodka Dill Cream Sauce
Roasted Red Bliss Potatoes
Sautéed Green Beans



Pan Seared Atlantic Salmon
· Four 6-8 oz skinless boneless salmon filets
· Marinate the salmon in 4 tablespoons olive oil, overnight
· Sprinkle a pinch of salt and a pinch of pepper on both sides of each filet
· Pre-heat oven to 400 degrees
· Heat a large saucepan on top of the stove for two minutes.
· Put seasoned salmon, skin size up in the heated pan. Sear for three minutes.
· Place pan in pre heated oven for five minutes.
· Take pan out of the oven and serve seared-side-up


Vodka Dill Cream Sauce · Finely chop one teaspoon of red onions and one teaspoon of garlic
· Heat small sauce pan over medium flame
· Add one tablespoon olive oil, red onions, and garlic
· Let caramelize until garlic and red onions are brown
· Add 1/3rd cup vodka, one cup heavy cream, two cups chicken stock
· Let reduce (cook down by half)
· Chop two sprigs of fresh dill and add to mixture
· Serve over salmon


Roasted Red Bliss Potatoes w/ Green Beans
· Wash five pounds of red bliss potatoes
· Cut potatoes into quarters
· Put potatoes in a mixing bowl and stir in 1 tablespoon olive oil
· Add salt and pepper to taste
· Chop three sprigs of fresh thyme and add to the potato mixture
· Lay potatoes out on a cookie sheet and bake in pre heated oven at 400 degrees
· Let cook for twelve minutes or until tender; set aside


· Cut the tips off of 2-3 pounds of fresh green beans
· Boil half gallon of water in a large pot; add pinch of salt
· Add beans to boiling water
· Let cook two minutes or until the beans are a bright green color and crunchy texture
· Remove beans from boiling water and put them in a bowl of chilled water


· In a medium sauce pan melt one teaspoon of butter, add potatoes and green beans. Add salt and pepper as desired. Add fresh herbs of choice
