Gale Gand's Short and Sweet
Pineapple Cornucopia
A colorful layering of strawberry jam, pineapple chunks and mandarin oranges deliciously topped with creamy Reddi-wip - great for snacks or dessert Recipe concept developed by Gale Gand
Hands On: 5 minutes Total: 10 minutes Makes: 5 servings (1 fruit cup with Reddi-wip each)
Ingredients:
5 teaspoons seedless strawberry jam
1 can (20 oz each) pineapple slices packed in juice, drained
Reddi-wip® Fat Free Dairy Whipped Topping
1/2 can (11 oz each) mandarin oranges, drained
Directions:
Spread 1 teaspoon strawberry jam in the bottom of five 4-ounce custard cups. Cut each pineapple slice into 5 sections. Place 5 pineapple sections around the bottom of each cup. Top with a second layer of 5 pineapple sections. Add a serving of Reddi-Wip in the center. Tuck 5 mandarin oranges in a pinwheel around edge of Reddi-Wip. Serve immediately.
Cook's Tips
Fresh pineapple may be substituted for canned. The produce section has fresh pineapple already cut for slicing or in chunks. You will need about 20 ounces. Or, purchase 1 medium pineapple. Remove skin, core it then cut into 10 slices. Proceed as directed in recipe. You will need 25 mandarin orange segments for this recipe. This is about half of an 11-ounce can.

Fudgy Chocolate Sorbet
Makes 6 to 8 servings
Ingredients:
1 cup sugar
3 1/3 cups warm water
3 ounces semisweet or bittersweet chocolate, melted
1 cup best-quality cocoa powder, sifted
2 teaspoons dark rum, Cognac or brandy
Pinch of salt
Directions:
Whisk the sugar and water together until completely dissolved. Place half of the sugar-water mixture in a bowl and whisk in the chocolate, cocoa powder, rum, and salt. Whisk in the remaining sugar-water mixture. Taste for sweetness and add sugar if needed: The mixture should taste just slightly too sweet at room temperature. When frozen, it will taste perfect. Refrigerate until cold (preferably overnight) and freeze in your ice-cream maker.*
*Once frozen, the sorbet tastes best the same day but will keep for up to a week.
