Mejillones al Ajillo

Ingredients:
1 lb. New Zealand black mussels
1/2 cup Chile Ancho peppers, seeded and julienned
1/2 Tbs garlic, minced
1 oz. Tequila
2 oz. white wine
2 Tbs butter
Juice of one freshly squeezed lime
1/2 oz. extra virgin olive oil
Salt and Pepper

Preparation:
Marinate julienned chile Ancho peppers in the freshly squeezed lime juice. In a hot sauté pan, add extra virgin olive oil and minced garlic. Sauté until garlic is golden brown. Add mussels. When mussels begin to open add marinated. Chile Ancho peppers and mix gently for 1 minute. Flame with the Tequila.Add white wine and finish with butter. Salt and pepper to taste. Simmer for 1 minute. Serve immediately.
