Eden's Salad
Mixed greens
1/4 cup cranberries
1/4 cup shitake mushrooms
1/4 cup shredded carrots
1/4 cup balsamic glazed walnuts
1/2 orange
1/4 cup shredded Romano cheese
3 Tbs balsamic vinegar
1/4 cup olive oil
1 Tbs fresh minced ginger
1 Tbs Montreal chicken seasoning
1 Tbs lemon pepper
1 tsp white pepper
Bulgar Stuffed Red Pepper with Balsamic Chicken Skewers
Ingredients:
1 cup bulgar
1 Tbs garlic
1/4 cup chopped onion
1 cup chopped shitake mushrooms
1 cup chopped red pepper
2 Tbs Vegeta seasoning
1 cup water
2 Tbs olive oil
1/2 red pepper
Directions:
Preheat oven to 350. Baked red pepper for 8 minutes. Sauté oil and garlic on stove top. Add onions and sauté until transparent. Add mushrooms, red peppers and seasoning. Add bulgar and mix well. Add water and bring to a boil. Turn off heat and allow bulgar to steam for 15 minutes.
Balsamic Chicken Skewers
Ingredients:
1 chicken breast
1 Tbs balsamic vinegar
1 tsp McCormick chicken seasoning
1 Tbs minced garlic
1 tsp lemon pepper
Pinch of salt
Directions:
Preheat oven to 350. Season chicken skewers and bake for 25 minutes.
